Scaling a Modern Pork Brand from Farm to Retail Shelf

Be hind the scenes from the Annual Meat Conference, a family farm roots to retail shelves, Lottie’s Meats is scaling a modern CPG pork brand through strategic packaging, branding, and meat industry distribution turning AMC’s tradeshow connections into real retail growth.

Lottie’s Meats is a fast-growing CPG meat brand redefining the pork category through chef-crafted sausage, premium ingredients, and intentional brand building. Founded by sisters from a sixth-generation pork farm in Southern Illinois, Lottie’s sits at the intersection of agriculture, culinary innovation, and modern retail strategy—bringing elevated pork products to today’s consumer.

“Our journey accelerated at the Annual Meat Conference 2025” says Founder Chesley. The Annual Meat Conference is a critical industry event ran by two powerhouses the Meat Institute and FMI for meat processors, retail buyers, and CPG brands. Exhibiting for the first time in 2025, Lottie’s entered the market with a clear focus: build a scalable CPG brand ecosystem that performs across retail shelves, refrigerated cases, and omnichannel distribution. That strategy quickly translated into traction.

“Last year’s AMC show in 2025 was a big milestone for us. It was our very first year exhibiting, and we showed up eager (aka, VERY nervous) to introduce Lottie’s Meats to the industry. What we didn’t expect was just how meaningful those connections would become. At that show we met several retailers who immediately understood what we were building and believed in our vision for a new kind of sausage making and community building.” - Chelsey Maschhoff

Today, some of those conversations have turned into partnerships with stores like Dierbergsin St. Louis,Bristol Farmsin Southern CaliforniaandTown & Country Marketsin Seattle. There’s a special feeling when you see Lottie’s on shelf in these stores and the pride that you feel as founders. Chelsey says, “hearing how customers are cooking, entertaining and coming together around our products—has been incredibly rewarding and reminds us what this journey is all about! It makes the hard days of navigating a tough supply chain, working with cold freight & distribution, navigating USDA regulations and merchandising across hundreds of stores ALL worth it.”

Over the past year, Lotti’s Meats has focused on growing thoughtfully and intentionally: building relationships with mission-aligned retailers, continuing to refine their products and supply chain, and introducing more people to out product line that truly elevates their plate with real ingredients and lots of flavor!

Looking ahead, they are excited about what’s next! A large goal is to keep expanding distribution - both in retail but with some aligned food service accounts like top bakeries, restaurants and breweries, continue innovating in the pork sausage category, and keep building a brand that makes people excited to cook with pork products like these!

Events like the Annual Meat Conference (AMC) remind us all how much collaboration and community exists in this industry. It’s truly remarkable the amount of support and confidence brands get after attending AMC.
